Banon Feuille 12/8 oz
Untie the raffia ribbons and unfold the chestnut leaves to unleash this little cow’s milk cheese soaked in eau-de-vie (brandy). It is best when ripened for a few weeks so that the cheese can fully absorb the woody aromas of the leaves and the fruity liqueur. Careful wrapping and dipping add a tinge of peach to the exterior and a light yellow color to the dense paste. With a longer maturation, Banon may have speckles of blue mold. Creamy and fragrant, Banon comes from southern France in the Haute Provence. Banon pairs well with fresh fruit and dessert wines.
